DESCRIPTION
Mortadella produced with pork from EC origin, appropriately minced and mixed with salt, herbs and spices. The lardons are obtained by dicing the hard fat from the pig’s throat. The recipe is the typical traditional Bolognese one compliant with the PGI specification with or without pistachio, gluten-free, lactose-free and added polyphosphates. The mortadella is suitable for celiac consumers and those intolerant to lactose. The product is vacuum-packed and available in various formats.
The recipe is without the addition of polyphosphates; contains pistachio when specified.
